Šurlice is a favorite dish of the island of Krk, a well-known island specialty. They are served on holidays, savored on all special occasions. This simply yet ingeniously made pasta will absolutely delight all gourmands and admirers of Krk cuisine.
Here we bring you a traditional recipe for šurlice, traditional home-made pasta from Krk:
Ingredients (for six persons):
1kg flour
Two eggs
1dcl oil
0,35 l water
Knead all the ingredients into a dough. The dough is to be rolled and cut into ca. 1dkg pieces. Roll the pieces (one by one) around a knitting needle to form šurlica - tube-shaped pasta ca 10 cm long. Take šurlica off the needle so that it stays hollow. Šurlice are to be cooked in salted water until tender (be careful not to overcook them!).
Once upon a time, šurlice were prepared and served exclusively with lamb and beef stew. Today they are served with various sauces made of zucchini or wild asparagus, homemade prosciutto, scampi, mussels, or Bolognese… As desired, homemade sheep cheese can be added.
The šurlice pasta making class and the šurlice tasting take about an hour and a half – the šurlice pasta making class takes about 20 minutes. Šurlice pasta making class and šurlice tasting is available on Thursdays at 6:00 p.m. in the tavern Luce in Vrbnik. The minimum number of participants is 6.
